You can either use the memory cards or get a Red Drive or Red Ram (solid state) -- for a run & gun documentary, I suggest staying away from the Red Drive and either springing for the more expensive Red Ram (for longer recording times) or using the flash cards, but you'll need a lot of them. Though for sitdown interviews, the Red Drives are robust enough and will hold more footage than the cards.
The main problem is that you need to download and back-up all that data every evening; it's not like a videotape you can toss into a bag and wait until post to deal with.
