Startup time is more of an issue when you're fighting the sun's retreat over the horizon, or you've got an intense scene/performance where the actor has gotten into a rhythm and momentum would be lost if you have to change bricks and reboot.
There have been some great products introduced to combat this however, like the hotswap battery plates, and more recently the hotswap adapter from Redline that seems like a great solution to the boot time issue (link below)

Of course, trying to keep on top of battery level and estimating good times for the swap when the camera's sitting idle for a few minutes isn't typically difficult to manage, though there will be those times when every minute is critical.
