Hey guys I know this thread is fairly old yet I thought I mention this since I just ran into this problem.

I bought one of the StarTech eSATA to USB 3.0 cables just to find out that in any mac they only work as USB 2.0
Fortunately I can return it! BUT anyone comig across this thread:

StarTech USB to eSata

Just tested this cable. Works great. 1.6GB file transferred from 1.8" REDMAG over FW800 took 20 seconds to copy to a 8TB thunderbolt RAID. Using the eSata adapter cable it only took 8 seconds. Worked great with both my 27" iMac and brand new 2016 MacBook Pro with a USB 3.1c adapter.

Curiously... the speed dropped substantially when I connected the cable to USB 3 hub on the iMac... 40 seconds. I suspect the cable reverted to USB 2 protocol or something. When connecting the cable directly to my iMac it rocketed back up to an 8 second transfer.
