When working with croped sensors, should you put in different "filmback" (chip size) vaules for every crop option you have?

yes, if you follow one of the crop sensor charts provided on this forum, you enter the filmback as the horizontal and vertical dimensions. The way tracking software works is calculating the relationship of points in space in relation to where those points intersect with a 2D plane of a known size (hence the filmback entry).

Where can I find this? I checked the Gavins link and theres info for the mx sensor:

Red M/MX

Sensor Size:

27.65 x 13.825mm [2:1 5k - (5120x2560)] † † †
24.2 x 10.37mm [2.33:1 - 4.5k (4480x1920)] † † †
22.12 x 12.44mm [16:9 - 4k (4096x2304)] † † †
16.59 x 9.33mm [16:9 - 3k (3072x1728)] † † †
11.06 x 6.22mm [16:9 - 2k (2048x1152)] † † †

Is there any official info from RED about the ScarletX filmback for 5k, 4k, quad hd, 3k?
