dhur, let's see...
well, all of the utilities available on any proper unix-like os, and some of the fancier ones: ssh (I couldn't live without it), rsync, svn, crc32.. etc.. nothing like a proper bash prompt with a pimped out profile and pretty colors.. ... lighttpd/tinyproxy/apache2/ruby/debian/pound..
Quicksilver - I have trouble using any mac without it.
all the apple schtuffs
photoshop
Good monitor calibration tools (eye one ain't bad, but there are others..)
Test pattern maker: http://www.synthetic-ap.com/products/tpm/index.html
(am I this much of a geek? ouch)
Probably Colorthink
Screenwriter. Weeeird and fantastic.
Omnigraffle (heart)
Squeeze
TextMate
Sketchup
MailTags
MailActOn (for mail.app) <-- wonderful
HiQual - a little utility that sets the high quality playback flag on quicktimes
VLC
VueScan
and thousands of tiny hacks for this and that..
