Sleep Mode??

I am currently working on set with a RED ONE camera.

Apparently we are having an issue on set where it goes into sleep mode.
how would we change the battery save function so the camera doesn't shut off?

You have a problem because the camera doesn't have a sleep mode.

you might want to check your battery connections and your power cable connections

I had a similar problem once. Turned out that we have had to much stuff connected to the camera so the battery wasn´t able to provide all the power needed.
Try disconnect some additional gear, if your connections are fine.
