does the focus ring stop or does it keep spinning?

Hard stops on all three rings - focus, zoom and iris. All very smooth and dampened so they spin smoothly.

Maybe a silly question: Does the electronic functions on iris and focus still keep working together with the new manual functions ?

No. The lens is fully manual. The electronics have been removed during the cine conversion process.
