Thank you, Antony. Also, for anyone who find this... the method first proposed by Antony worked fine for me. I went into recovery mode and disabled SIP. I booted back up into regular mode and the kext installed fine.
 
Just a reminder for people see options to upgrade to 'macOS Big Sur'

If Apple have followed through on locking down kernel extensions (that Reds Rocket X drivers use) -
you are likely to find that this thread will no longer help you bypass the new security restrictions!

Oh My God! This should be an amazing solution to my problem. Thank you Antony for creating this. Could you please send me a Wetransfer of the kext.zip, I am willing to host it on my Wetransfer so that it never expires and more people searching for answers could have access to it. Do you know if this workaround could also work for Big Sur? Thank you for helping us keep our EOL Red Rockets working, as the investment was big and the Rocket is still very useful. I will be installing it on Big Sur.
 
Antony! It worked! Everything installed, beautifully on Big Sur, latest update to this day. It even asked me to accept in Security, and I did! The Only problem I am facing now is, that I don't have a ROCKET-X, but the older card, and these installed drivers don't seem to detect my RED ROCKET. Would these drivers work on my RR? Would we need to create a new Kext Package? Can you please help me, I beg you. :D. Thank you.
