Red newbie (short shoot)

I am approaching my first Red shoot, at the month end. A 4 day shoot - short film with 20 ish actors. A couple of basic questions are on my mind.
1 How may stops between black and white?
2 How many from mid grey to peak white?

We have daytime, evening and night scenes to film interiors and exteriors. I have heard numerous contradictory ideas about doing white balances or not, using IR filters or not.

Any info on these basic points would be good.
