Postprocessing for monochrome Canon

I chanced upon a 5D Mk II with the bayer-pattern removed. What is the proper way to import those RAW files, so that I get maximum resolution? My thinking is that siimply importing it into Lightroom/Photoshop would introduce (unwanted/unnecessary) debayering and a loss of resolution, right? Is there a way to bypass the debayering?

I think Rawtherapee can export a non-demosaiced image.
