What is a workflow to get from the photographer the curves and settings they're applying to their CANON DSLR photos and apply the same settings to one's RED files (for in the scenario where you're both shooting in the same conditions for the same client?)

If they edit photos in Photoshop (and use adjustment layers) they can export a LUT that you can import into Resolve/Premiere/Final Cut/etc.
Here's the path in Photoshop: File > Export > Color Lookup Tables
Here's an article that you could send them: https://www.premiumbeat.com/blog/how-to-generate-easy-luts-in-photoshop/

If they use Lightroom, they could get a plugin (it's $10) to export LUT's: http://www.johnrellis.com/lightroom/exportlut.htm

A LUT will get you there the fastest. Just keep in mind it won't be an exact 1:1 lookalike, and there may be instances where the LUT just doesn't really work that well.
Other option is having them send you screenshots of what they did (values) and go from there.
