You can overlay camera setting on the monitor outputs.
But you'll need a way of changing the menus (side handle).

ok... just a quick note; personally I would not suggest dropping the touchLCD because it is the most common and best working option to quickly change ALL settings and to change settings even after camera/firmware-updates and resets. The touchLCD is usually your "main connected control-unit"! Sure you can also change settings with the Side Handle, the RedMote, some even with the EVF I think... but what if you accidentally hide/turn off the menus or assign them wrong or what if you loose connection to these control-modules? There is a slight chance to get stuck at some point if you don't be careful here and if you don't have a working control-unit connected to your camera-brain... and if that happens in field on a remote location without access to pre-built firmwares (there are force-firmwares out to fix these issues) you're basically doomed.
With the RED ONE you had all of the controls "built in" at the camera itself. That's not the case with the DSMC system anymore!
These are all things you can sort out or get around but see it as a suggestion/warning to take that in mind!
