Ok, I've got a TA3 containing a white, blue and unshielded cable... I can't quite make out which pins they're coming off but I think it's 1-white 2-blue and 3-unshielded.

What should go to tip, ring and sleeve respectively? Is it as simple as just the same as XLR to jack but with pins 2&3 reversed?

Audio wiring for a TA3 cable is the same as for an XLR. Pin 1 shield, Pin 2 Hot +, Pin 3 cold -. Be aware that pin 1 and pin 2 swap sides on the female connector with respect to the male. Pin 3 is the one in the middle. Pin numbers are marked on the connectors next to the solder cups. Read them and you won't go wrong.
