While a camera is gathering low-resolution video at 30 frames a second, it could also periodically take a high-resolution still image. This is exactly why it would be cool for Red to eventually allow us hackers more access than the current SDK.

I wonder how many Red ideas/patents the Stanford kids will stumble upon?

According to CNET, they use the camera module of the Nokia N95, so why bother. But there is some other nice "open source" hardware out there with a strong community support.

The open-ness here is with the backend; not the acquisition device.

You could both anything you want (Dalsa scientific sensors for an example) to a readily available, open backend to massively reduce the time and cost of producing a dedicated camera setup.
