Does anyone know if the Epic Canon mount will support both EF and EF-S lenses?

Yes it will - there's no mirror to hit the back element of EF-S lenses.

I don't think anyone outside RED actually knows, but my impression is that it will actually be easier & faster to change mounts than with RED One.

Again no one outside RED knows, but I am going to guess no.

FD is old, and EF fits more with RED's notion of touch to focus.

Also there are lots of widgets like this:

That let you adapt fairly FD glass easily to EF and other mounts.
