All good advice. We have an HVX200 as well and for guitar lessons, since I could light the room easily, I could see using it as well. Shallow DoF is not really a benefit for guitar lessons, you want that whole fretboard and everything in focus. In fact, you might want to consider in the future two cameras, so you can have a master shot showing playing of both hands, and a secondary shot, run by someone, that can really focus on either hand. Talk about pumping out even faster.
Since you are in a static position, I'd definitely be running more mics. I play a Taylor 314ce and record in off it and mic it at the same time. Although, truth be told, if you are playing something like a strat or les paul, no extra micing is needed. (As you know, that sound acoustically is NOT pleasing)
Archtop, yeah, I'd still mic it because I like that body resonance.
What I am getting at is I'd probably pick up a 4 track recorder (there are a few) with XLR ins and bring all that in separate. (Or just feed it to a computer with something like a MOTU, M-Audio or PreSonus type interface since you sound like you are in a fixed location).
This way, with the separate tracks on some different mics, it's really nice to tune up the recording to make it pleasing for the listener.
And I agree, sounds to me like cinema camera is not what you need but something ENG based for ease.
