My AC noticed I changed the ISO while we had been rolling and asked "is that bad?". I laughed and said I have no idea... Can someone let me know what happens when you change ISO while you are recording?

You mean in the middle of a take? I don't think it matters. Its all RAW so ISO is simply a metadata setting, and doesn't actually have any real world effect on the footage. Its greatest effect is how it prompts YOU to add or remove light. Depending on your ISO setting, you will perceive and react to the footage differently. And THAT has real world effects.
