B&W mode

I must first admit I shoot mostly B&W so I'm biased, and know nothing about chip design. Would it be possible to have a B&W mode that would do away with the RGB demosaic and do something tailored to B&W instead? Maybe that would preclude having to have a medium format size chip, but end up instead with both: a sharper, and a higher resolution image from a smaller chip size.

This is relevant to your request, because its the last one on my list, plus another on my list is relevant to "a sharper, and a higher resolution image from a smaller chip size" - user removable/replaceable AA filters.
