I'm a new RED One owner, I have a RODE NTG-3 mic and mini XLR to XLR cable. Everything is plugged in, but to my knowledge, no audio is being captured? Am I doing this incorrectly?

You need to:

0) Read the User Manual? https://www.red.com/downloads/4f56854d6261f95a57000647 includes Menu Map.
1) Enable the appropriate Audio Input channel and set the channel to be Microphone Level (System > Sound > REC ENABLE)
2) Enable +48V Phantom Power on that Input (System > Sound > 48V MIC > Tick channel box)
3) Trim Input Mic sensitivity to get audio levels below clipping (Video > A/V MENU > Audio > Select Channel and adjust)

It was the Phantom Power. Thanks!

It is almost always the phantom power.
