    I cannot for the life of me find this in the menus. Is it in a menu? Has anyone seen it?

    It's not a special option. You just set the desired REDCODE as always and your camera uses it or whatever the closest usable value for your current resolution and framerate is. REDCODE-setting on LCD will go yellow if you are not at the target. Set it to the lowest compression and you'll always record in best quality, even when wildly switching between 4k@24, 5k@12 and 1k@120...
