In a few weeks we will be shooting some training videos that will require video screen captures off of a PC. In your experiences what is the best software to do this? Thanks!

For the training videos I recorded for The Foundry for STORM I avoided using software screen recording altogether and used an Blackmagic DVI extender to convert the DVI output of the computer into HD-SDI, and captured that into the edit suite. That way the machine was free to run the software at full speed, without the overhead of recording software.
